Hertfordshire packs a lot into a small county. It has a cathedral city, two of the first garden cities, several post-war new towns, a string of commuter towns along the main lines out of King's Cross, Euston and Liverpool Street, and a surprising amount of open farmland in the north and east. The M1, A1(M) and M25 all cross it, which is why so many companies have offices and depots here.
Our job is the same in all of it: turn up with the roast, the team and the sides, cook everything on site, carve to order and leave the place tidy. A classic hog roast is still the most requested option, but whole lamb and BBQ menus are close behind, and many Herts events combine two of the three.

The south-west of the county, around Watford, Borehamwood and Hemel Hempstead, is busy and well connected, with a lot of office and business-park work alongside family parties in the suburbs. St Albans and Harpenden bring big gardens, school and club events and plenty of milestone birthdays.
Up the A1(M), the planned towns of Welwyn Garden City, Hatfield and Stevenage have large employers, a university and green space built into their layouts. East Herts is a different world again: the county town of Hertford, the Lea and Stort valleys, and rolling farmland towards Bishop's Stortford and the Essex border, where barn and marquee weddings are common.
Logistics follow that pattern. In the south, it's parking restrictions, tight side access and office-site rules. In the rural north and east, it's farm tracks, field gates and the odd soggy meadow. We ask about both when you enquire.

Hertfordshire has a good supply of barns, farm venues and country-house lawns, particularly in the east and north of the county, and a hog roast suits all of them. Some couples make it the wedding breakfast, served buffet-style with a spread of salads and potatoes or brought to tables; others book it purely as evening food, when fresh pork rolls with crackling are exactly what guests want.

Around 130 day guests and a busy evening crowd. Hog roast and whole lamb for the wedding breakfast with salads and new potatoes, then pork rolls with apple sauce at 9pm from the same roast. The venue's field needed a firm route for our vehicle, which we agreed with the owner in advance.
Staff on a business-park lawn with a one-hour lunch window. A hog roast counter and a BBQ serving side by side kept the queue short, with vegetarian and vegan dishes cooked and served separately and clearly labelled.
About 70 guests, narrow side access and a lawn at the back. We cooked on the drive, carried the carved food through to a gazebo counter on the patio and cleared away before the music finished.
